Selim-Pfeffer stammt aus Ghana und ist ein in Nordafrika verwendeter Ersatzpfeffer. Er wird manchmal Moorpfeffer oder Selim-Körner genannt und oft mit Paradieskörnern verwechselt. Selim Pepper hat einen rauchigen, moschusartigen und harzigen Geschmack mit einem Hauch von Pfeffer, aber keine echte Piperin-Hitze oder ein wärmendes Gefühl.
Ein Muss für westafrikanische Eintöpfe. Selim-Pfeffer wird auch Negerpfeffer, Selim-Körner, Moorpfeffer, Senegal-Pfeffer, Uda-Schoten und Kieng genannt, was alle seine alten Ableitungen und Vorurteile offenbart. Selim-Pfeffer stammt aus der Familie der Puddingäpfel (Annonaceae) und stammt von der Pflanze Xylopia aethiopica ab, die im tropischen Afrika beheimatet ist.
Die Beeren des Selim-Pfeffers sind in gebogenen Schoten von 2,5 bis 5 cm Länge eingeschlossen, und es gibt etwa 5 bis 8 Beeren pro Schote. Die unreifen Schoten sind grün und wachsen in fingerartigen Büscheln in der Mitte der Pflanze, die beim Trocknen eine dunkelbraune Farbe annehmen.
Selimpfeffer ist aromatisch und harzig, relativ scharf und leicht bitter. Im Senegal wird Selim-Pfeffer oft geräuchert verkauft, da er noch grün geräuchert wird, was ihm eine klebrige Konsistenz verleiht, und dann als Poive de Senegal verkauft wird. Wenn er zerstoßen wird, eignet er sich hervorragend zum Einreiben von Fisch, während er in Nigeria in Pfeffersuppenmischungen verwendet wird.
