Die Maroons, entlaufene Sklaven, die während der britischen Invasion im Jahr 1655 in die Berge Jamaikas geflohen waren, erfanden Jerk, die würzige und doch süße rauchige Gewürz- und Kochmethode. Wildschweine waren das übliche Ziel und sobald sie gefangen wurden, erstickten sie das Schweinefleisch mit einer Gewürzmischung (dem Gewürz). Dann garten sie das Fleisch langsam über einer Grube aus rauchendem Pimentholz und Kohlen, die die Kochgruben bedeckten, um die Möglichkeit zu minimieren, dass Rauch die Eindringlinge auf ihren Standort aufmerksam machte (die Methode).

Vorbereitung und Verwendung
Um das Herz und die Seele Jamaikas in Ihre Jerk-Küche zu integrieren, schneiden Sie das Fleisch auf und reiben Sie 2 Esslöffel unserer Gewürze pro 500 g Huhn, Fleisch oder Fisch ein. Idealerweise über Nacht marinieren, bevor man es grillt, grillt oder langsam röstet. Dann entspannen, essen und genießen!
